Watermelon Granita: Originally created in Sicily, Italy, this semi-frozen dessert has many variations and ways to enjoy. Granita is made from two basics: fresh fruit and water, and is frozen into a delightful, crunchy, melt in your mouth dessert. The Positive Thread has created their own delicious version made with watermelon, lime, and coconut water.
Ingredients: 1/2 watermelon (~900g) cut into rough chunks 1 lime juiced or 1 True Lime Packet 1/4 cup coconut water (or regular water) 3-5 Stevia drops (if watermelon is very sweet can skip)
Directions: Cut watermelon into chunks and add to a blender with lime and coconut water. Blend until liquid. Pour into a shallow glass baking dish (13x9 size works well.) Freeze for one hour. Stir and freeze again for 30 minutes. Granita should start to freeze at this point. Remove and scrape top with a fork. Continue freezing and removing every 30 minutes and scraping top with a fork, until entire dish is flaky snow crystals. Store in an airtight container once finished. To serve, add to a bowl and top with whipped cream.
Makes 8 Servings. Macros per serving: Carb: 12g, Fat: 0g, Protein: 1g
Sweet Summer Guacamole: Try out this tasty guac recipe for a fresh fruity twist on the classic Mexican side dish - it’s made with mango, strawberries and of course avocado! Serve it as a dip or have it on toast for breakfast. You really can’t go wrong enjoying it at every meal!
Ingredients: 1 avocado mashed 6 strawberries, finely diced 1/2 mango, finely diced 1/2 lime juiced Salt to taste
Directions: Mash avocado in a bowl. Stir in diced strawberry, mango and lime juice. Add salt to taste. Serve with cucumber chips or regular chips.
Makes 4 servings. Macros per serving: Carb: 7g, Fat: 5g, Protein: 1g
Tex-Mex Pizza: No need for a fancy pizza kitchen! Try out this delicious tex-mex pizza prepared and baked in under 20 minutes. You can’t beat that! This clean eating pizza is made with a Cali’Flour Original Crust and a cheddar style dip in place of pizza sauce. Yum!
Ingredients: 1 Cali'Flour Original Crust 6 Tbs. Honest Stand Cheddar Style Dip 1 Serving Corn, Tomato & Black Bean Salad 2-4 Tbs. Salsa 2 green onions sliced
Directions: Bake crust for 7-10 minutes, remove and let cool for 5 minutes. Spread cheddar dip over crust, top with bean salad and bake for another 7 minutes. Remove, top with salsa and green onions. Slice and serve.
Macros for whole pizza: Carbs: 30g, Fat: 17g, Protein: 23g
