Easy Turkey + Veggie Meatloaf w/ Sweet Potato Fries

Looking for an easy and good way to hide some veggies from your kiddos (and/or hubby?!) Look no further than this veggie-packed meatloaf! Even better? Prep time is less than 20 minutes!
For the meatloaf
2lbs ground turkey breast
1.5 cups chopped cabbage (we love this Trader Joes blend)
2 bell peppers
4 cloves or 1 tbsp minced garlic
2 tbsp Worcestershire sauce (or more if you love it like we do!)
For sweet potato fries
🍠 4-5 Sweet potatoes
🍠 Paprika, garlic powder, salt if desired
Directions for the meatloaf
1️⃣ Chop bell peppers, onions, cabbage, and garlic (unless already minced).
2️⃣ Add in large bowl with turkey, egg, and Worcestershire sauce.
3️⃣ Mix well - your hands work the best!
4️⃣ Sprinkle EVOO in casserole dish to prevent sticking, put the turkey mix in.
5️⃣ Drizzle with ketchup if desired.
6️⃣ Bake at 375 for about 45 minutes.
Directions for the sweet potato fries
1️⃣ Wash potatoes, slice about a 1/3rd inch thick.
2️⃣ Drizzle EVOO on baking pan, put taters on there and them flip them once, so they get EVOO on both sides.
3️⃣ Sprinkle paprika, garlic powder, and salt if desired!
4️⃣ Bake at 375 for about 30 min, flip during last 10 min. ENJOY!
The meatloaf makes 6-8 servings, so enjoy the leftovers! Try it on gluten-free bread as a "meatloaf burger" for lunch 🍔
