#Quick&Easy Recipes: Healthy(ish) Mexican Casserole

When you're cooped up in the house, you might be lacking dinner #inspo. Fear not: we've got you!

This quick and easy recipe is protein-packed, delicious (even the kiddos will love it!), and gives you 8-10 servings (depending on how hungry you and your housemates are!). It's made with mostly canned items you may have lying around your pantry. Feel free to substitute anything you don't like or don't have - that's the beauty of a casserole, there's no right or wrong way to do it!

We call it healthy-ish due to the heavy sprinkle of melted cheese on top (because... #treatyoself), but if you prefer it to be a bit more sinless, leave off the cheese - it's still delish.

The casserole-topping world is your oyster: we've listed a few of our faves but the possibilities are endless!

Without further ado - here are the #dEATS!


2 lbs grass-fed beef (could use any ground meat or meat alternative)

1 white onion

2 bell peppers

1 jalapeno

3 cloves of garlic (or 1tbsp minced garlic)

2 cans of diced tomatoes

1 can of organic corn

2 cans of fat-free refried black beans

2 packets of taco seasoning (we used Oh My Spice Taco Party... or you can DIY with this simple recipe)

1/2 cup liquid: try chicken broth, beer, or even water

1.5 cup of grass-fed cheese (optional)

Topping options:

Cilantro, avocado, hot sauce, salsa, greek yogurt, sour cream, tortilla chips, etc.


#1. Using two pans, simultaneously brown the meat and sautee the onions, garlic, bell pepper and jalapeno.

#2. One meat is browned, add in cans of diced tomatoes and and corn (drain the corn), as well as the taco seasoning. Stir well.

#3. In a casserole dish, create a layer with the canned beans.

#4. Next, layer the sauteed veggies.

#5. Then, layer the meat mixture.

#6. Lastly, if desired, layer the cheese on top. Bake at 350 for about 15 minutes or until cheese is melty and delicious looking. Then ENJOY!
