Naturally sweetened and packed with fiber from Joolies medjool dates, these little gems will give you the ⚡energy boost⚡ you need to get going in the morning. Perfect Breakfast “Date” Cookies
(Vegan)
Prep time: 25 minutes
Cook time: 9-11 minutes
Total time: 35 minutes
INGREDIENTS:
1 cup whole wheat flour
1 tsp baking soda
2 tbsp flax seed meal
1/2 tsp salt
3 tbsp unsweetened coconut flakes
1/2 cup peanut butter
1/3 cup date or maple syrup
1 tsp vanilla
1 cup chopped Joolies dates
2 tbsp chocolate chips (optional)
2-3 tbsp almond milk or water
DIRECTIONS:
Preheat oven to 350 degrees and line a baking sheet.
In a small bowl, combine flour, baking soda, flax, coconut flakes, and salt until thoroughly combined and then set aside.
In a separate bowl, mix the peanut butter date or maple syrup, and vanilla.
Next, combine the flour mixture with the wet ingredients. Stir in the chopped dates and chocolate chips. Note: the batter will be dry.
Add water or almond milk until the batter is moistened.
Scoop batter onto the lined baking sheet and flatten with a fork.
Bake for 9-11 minutes and enjoy!
