Check out this simple one-bowl recipe that you can whip up on the weekend and then have breakfast all week covered! 🙌
1 cup unsweetened organic applesauce
3 tablespoons maple syrup
1/2 teaspoon vanilla extract
2 ½ cups packed almond flour
1/2 cup flaxseed meal (you can put whole flaxseeds in a blender to create "meal")
1 teaspoon baking soda
1/4 teaspoon salt
1 cup frozen organic blueberries
Preheat the oven to 350F. Prep an 8 ½ x 4 ½ inch loaf pan with spray EVOO.
In a large bowl, whisk together applesauce, eggs, maple syrup and vanilla extract until well combined. Add in the almond flour, flaxseed meal, baking soda and salt. Stir well to combine. Fold in the blueberries.
Pour batter into prepared loaf pan, and smooth the top with a spatula. Bake for ~45 minutes to 1 hour or until a toothpick comes out clean in the middle of the bread.
Take out of oven and allow to cool. Top with nut butter and enjoy!
