Gluten-free Chocolate Chip Protein Cookies

Chocolate chip cookies with benefits - like healthy fats and protein, thanks to a secret ingredient: Bob's Red Mill almond protein powder from the February 2021 CLEAN.FIT box! 💪

Here are the #dEATS:


  • 1 cup Bob’s Red Mill Almond Protein Powder

  • 1/4 cup oat flour (tip: put quick oats in the food processor to make flour)

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 6 tbsp butter (coconut oil for vegan option)

  • 1/2 cup coconut sugar

  • 6 tbsp peanut butter

  • 1 1/2 tsp vanilla extract

  • 1 large egg (chia egg for vegan option)

  • 1 cup semi sweet or dark chocolate chips


#1. In medium size mixing bowl, add almond protein powder, oat flour, baking soda, and salt. Set aside.

#2. In large mixing bowl, using hand mixer or stand mixer, beat butter or oil, sugar, peanut butter, and vanilla.

#3. Once mixed well, beat in eggs.

#4. Then, gradually add flour mixture until well mixed.

#5. Lastly, add in chocolate chips.

#6. Drop rounded tablespoons onto a greased baking tray. Then, bake at 350 for 12-15 minutes.

You can also do bar cookies by baking in a 8x8 inch baking tray for 20-25 minutes - easy breezy!
