1 cup Bob’s Red Mill Almond Protein Powder
1/4 cup oat flour (tip: put quick oats in the food processor to make flour)
1 tsp baking soda
1/4 tsp salt
6 tbsp butter (coconut oil for vegan option)
1/2 cup coconut sugar
6 tbsp peanut butter
1 1/2 tsp vanilla extract
1 large egg (chia egg for vegan option)
1 cup semi sweet or dark chocolate chips
#1. In medium size mixing bowl, add almond protein powder, oat flour, baking soda, and salt. Set aside.
#2. In large mixing bowl, using hand mixer or stand mixer, beat butter or oil, sugar, peanut butter, and vanilla.
#3. Once mixed well, beat in eggs.
#4. Then, gradually add flour mixture until well mixed.
#5. Lastly, add in chocolate chips.
#6. Drop rounded tablespoons onto a greased baking tray. Then, bake at 350 for 12-15 minutes.
You can also do bar cookies by baking in a 8x8 inch baking tray for 20-25 minutes - easy breezy!
