One-bowl Cashew Chia Breakfast Cookies

We TOTALLY think you can with this delicious and nutritious cashew butter chia breakfast cookie recipe 😋⁠

Here are the #dEATs:

Ingredients:

1 cup cashew butter (could sub any nut butter)

3/4 cup date or maple syrup (or honey)

1 tsp vanilla extract

1 egg

2 cups oat flour (tip: put 2 cups of old-fashioned quick oats in the blender for a few seconds to turn it into flour!)

1/4 tsp cinnamon

1/4 tsp salt

1 tsp baking powder

1/4 cup chia seeds

Directions:

  1. Preheat oven to 350F degrees.

  2. Mix room-temp cashew butter with maple syrup (or sweetener of choice), then add in vanilla.

  3. Beat in the egg.

  4. Add the dry ingredients slowly and mix well.

  5. Drop rounded tablespoons of dough onto a greased cookie sheet.

  6. Bake for ~12-15 minutes (take them out just before you think they're done cooking, as they will continue to cook for a few minutes after you take them out!)
