Craving a sweet but better-for-you treat? Check out these delicious (and simple!) almond butter cups, boosted with Bub's Naturals grass-fed collagen from the Special Edition Muscle Maven CLEAN.FIT box!
2 cups chopped dark chocolate (I like Hu Kitchen)
1/4 cup coconut oil
1/2 cup unsweetened nut butter (I like pecan or almond butter)
2 scoops Bub’s Naturals collagen peptides
1 tablespoon coconut or almond flour
1 tablespoon maple syrup
sea salt for finishing
Use a silicone mold or line a muffin tin with cupcake papers
Melt chocolate and coconut oil over the stove, being careful not to burn
Pour melted mixture into each mold, just enough so the bottom is covered. Put mold in freezer while you make the nut butter filling
Warm/heat nut butter in double boiler or microwave (about thirty seconds)
Mix in maple syrup
Slowly add almond flour and collagen powder until thick batter forms
Pull out muffin tin from freezer and add a scoop of mixture into each mold; press nut butter down so it’s flat
Pour remaining melted chocolate on top, and sprinkle sea salt on top of that (trust me it’s so good!) can also add crushed nuts or coconut to the top)
Put back in freezer for about 30 minutes until set
Store in airtight container in the fridge – they do melt easily!
