Looking for a nourishing, tasty, and simple weeknight meal? Look no further than this coconut chicken curry that can be made in a crockpot in just a few easy steps!
The whole recipe takes less than 20 minutes to prep and will feed you (and your family!) for several days!

2 lbs chicken (or protein of choice - try tofu + cauliflower for vegan option)
5 medium potatoes
1 1/2 onion
5 cloves garlic
1 can tomatoes
bunch of kale
1 can coconut milk
1 cup chicken broth (or vegetable for vegan option)
1 1/2 tbsp curry powder
1 tbsp turmeric
1 tsp cumin
1/2 tsp cayenne
Salt to taste
1️⃣ Wash and cut up potatoes, and add to bottom of crockpot
2️⃣ Rinse chicken (or protein of choice) and add to top of potatoes
3️⃣ Chop up onions and garlic; add on top of chicken
4️⃣ Rinse kale and add into crockpot (say hello to super greens!)
5️⃣ Open and pour can of tomatoes into crockpot
6️⃣ Measure spices and add on top!
7️⃣ Measure and pour chicken broth and coconut milk over everything in the crockpot
8️⃣ Cover tightly and cook on low for 8 hours. Prepare for delicious smells throughout the house
