Mushrooms: the next superfood?

Mushrooms offer many important nutrients, including B vitamins, selenium, potassium, copper, iron, and vitamin D. Mushrooms also offer some other great benefits. Here are our top 7 favorites! They:
Are high in antioxidants. Mushrooms rank very high on the ORAC scale, meaning they contain free-radical fighting antioxidants.
Promote gut health. Mushrooms act as prebiotics, which means they feed the good bacteria in your gut. (Learn more in this past blog post.) Good gut health helps strengthen your immune system.
Are high in fiber. Mushrooms contain two types of fibers called beta-glucans and chitin. These fibers have been shown to have a protective effect against gastrointestinal diseases, obesity, stroke, cholesterol, and hypertension. Further, they’ve been shown to support weight loss by decreasing appetite and increasing the feeling of being full.
Can lower risk for diabetes: A 2018 study showed that people who eat a lot of fiber may lower their risk of developing type 2 diabetes. For people who already have it, fiber can help reduce blood glucose levels.
Can improve heart health. The fiber, potassium, and vitamin C in mushrooms may contribute to heart health by regulating blood pressure and muscle contraction, which may decrease the risk of hypertension and cardiovascular disease.
Have cancer-fighting properties. Mushrooms contain a type of protein called lectins, which are able to bind to abnormal cells and tell our immune system to destroy them. Many studies have shown that mushrooms help fight many times of cancer including breast, lung, pancreatic, cervical, prostate, carcinoma, and gastric cancer, as well as acute leukemia
